5 Minute Dairy Free Pesto

For a girl who doesn't care much for red sauce, pesto is my hero. I know, I know. Pesto isn't for everyone. But neither is red sauce if you ask me. Pasta, pizza, chicken, you name it and I'll throw pesto on it or in it. I enjoy this pesto recipe in particular because it is dairy free, sugar free, vegan friendly and Whole 30 approved. Plus, it tastes hella good. I say it's the best of all worlds, but I'll let you be the judge.

By the way - this pesto goes really well on my Flatbread Pizza. Since that recipe makes 2 separate flatbreads, I like to top one with pesto (for me) and one with red sauce (for Kyle!)


5 Minute Dairy Free Pesto

Total Time: 5 mins
Yields: ½ to ¾ cup pesto

Ingredients:
¾ cup fresh basil
2 tsp minced garlic
¼ cup pine nuts
¼ cup + 2 tbs extra virgin olive oil
1 tsp salt
½ tsp lemon juice
Steps:
  1. Melt 2 tbs olive oil in a small sauce pan. Add pine nuts and toast for about 5 minutes until slightly brown and fragrant.
  2. Dump pine nuts into food processor with all other ingredients. Pulse until smooth and creamy. Stop processing to scrap down the edges with a spatula as needed.
  3. Store in an airtight container in the fridge
