Honey Mustard Brussels Sprout & Kale Salad

FYI, I'm about to ramble about a company that I love. This isn't even close to sponsored, I just really, really, really, really love this company.

If you haven't introduced Tessemae's into your life yet, I'm about to rock your entire world. I found this company a couple years ago not too long after starting paleo when I was searching for a paleo friendly ketchup for my boyfriend. Not for me because tomatoes = gross and ketchup = ALL the tomatoes. I wasn't going to make it because I didn't want to have to taste it, so I was on the hunt for one someone else had taste tested for me. The things you do for love, huh? I ended up discovering Tessemae's.

They make all sorts of yummy dressings and condiments (plus salad kits & marinades!) that appeal to a ton of different dietary types. I've used their ketchup, barbecue sauce, honey mustard, zesty ranch, lemon garlic dressing, balsamic dressing, creamy ranch dressing... should I keep going? I seriously don't have a single bad thing to say about them. They are all full of clean ingredients. There are tons that are paleo and whole 30 approved. AND I can find them in local stores (thanks Whole Foods!) 

Yes, I could easily make dressings at home, and I do, but for when I'm not up to it or I want to try something different, Tessemae's is legit. They frequently run sales and really aren't that expensive to begin with. Apparently they re-branded recently too, which I am telling you for no other reason than the fact that their labels and packaging look way better now. If I bought a product based on it's label, this would be it. Also, because the label has the ingredients which are ALWAYS CLEAN. 

Now that I'm done with my lovey dovey Tessemae's rant, I'm about to give you a new recipe that I'm obsessed with.  I use Tessemae's Organic Honey Mustard dressing in it, but if you don't want to use that, don't like it (you crazy?) or have easier access to another product, that's totally fine! Just sub that in instead.

Since it's almost summer time (maybe? hopefully?) I've been in the salad mood a lot, but I've quickly tired of the traditional lettuce base. I've fully supported the brussels sprouts salad base train from afar and have now decided to jump on. For this salad, I've combined shredded sprouts with kale for a tasty, slightly crunchy base. The green apple gives it a nice tart twist to counteract the slight sweetness of the honey mustard sauce. There's also olive oil to add in some healthy fat and thin the dressing out a bit. I like to pair mine with some tuna salad, but I bet it'd be great with another protein too! It's the perfect dish for tons of different lifestyles including gluten free, paleo, dairy free and vegetarian!


Honey Mustard Brussels Sprout & Kale Salad

Prep Time: 5-10 minutes
Inactive Time: 30+ minutes
Yields: 4-5 servings

Ingredients:
5 oz baby kale, chopped (I buy a big bag at Trader Joe's)
10 oz shaved brussels sprouts
1-2 green apples, cubed
¾ cup sliced almonds
½ cup Tessemae's Honey Mustard (or other brand)
¼ cup extra virgin olive oil

Steps:

  1. Combine salad base, apple and sliced almonds in a large bowl. 
  2. In smaller bowl, whisk together honey mustard and olive oil.
  3. Pour dressing onto salad base and mix well until all is coated in dressing.
  4. Let rest in the fridge for at least 30 minutes before serving. The longer it rests, the more it will soften up the kale and brussels sprouts.
