Low Carb Garlic Herb Shoestring Jicama Fries

The most popular post on my site on a consistent basis is the recipe for my Low Carb Seasoned Jicama Fries. They’re one of my favorites to make and are a hit with readers on here too, but have a bit of a kick to them with the spice blend I used. This new recipe gives you the same great, crispy fry feel and flavor but with a garlic herb seasoning mix instead. Plus, I made these ones more like shoestring fries for a little change :)
There are two real tricks to getting crispy jicama fries. The first is boiling them before baking them. The second is remembering to flip them in the oven. Most recipes have you flip halfway through, but I find that I can miss some fries in the flipping process, so I suggest flipping twice during the process. That way you can make sure you’re crisping them up evenly.
These fries bake for about 40 minutes, depending on your oven, and are ready to eat pretty much right away. Pair them with a nice steak, a pork burger or just eat them on their own.

- 1.25 lb jicama (I buy presliced from Trader Joe's)
- 3 tbs coconut oil (avocado oil or butter works too)
- 3/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried rosemary
- 1/4 tsp dried thyme
- 1/4 tsp dried parsley
- 1/4 tsp dried basil
- sea salt to taste
Note: Baking time may vary by oven. If the fries aren't crisped to your liking, continue to bake them. Check every 3-4 minutes.
