Strawberry Milk Rumsicles [Guest Post: Kasumi of miyahara_eats]

It's still summer, and I feel like I’m overheating half of the time. My MIL loves to pour leftover fruits into the popsicle mold for my niece and nephew, for them to eat as a healthy treat later on. Of course, she would hand me one too so we could all cool down together.

I recently bought a popsicle mold set myself, and decided to make a treat for myself with a little alcohol. It was then that I talked to Katie who brought up an opportunity to guest blog for her! Perfect, right? Now my mission was to create something paleo and with alcohol. There are sooo many popsicle recipes out there, but I wanted to feel a connection to mine. I looked back at my childhood and remembered my favorite drink, milk with muddled strawberries. This recipe is based off of that simple treat my mother used to eat.

Before we begin, we need popsicle molds! The brand of popsicle mold I got is lebice from Amazon which comes with a funnel for pouring liquid into the mold and a cleaning brush. It also comes with a recipe e-book.

Now, let’s get started! This recipe is a simple three to four ingredient recipe, depending on whether you would like to add some alcohol or not! For you milk lovers, you can also substitute the coconut milk for regular milk, but it may not turn out as creamy.


Strawberry Milk Rumsicles

Strawberry Milk Rumsicles
Simple 3-ingredient Paleo popsicle recipe! Add a splash of alcohol for adult popsicle fun!
Ingredients
  • 1 13.5 oz can coconut milk
  • 5-6 tbsp maple syrup (adjust to your liking)
  • 2 cups strawberries, sliced or whole
  • 3 shots white rum
Instructions
1. Preheat oven to 400 degrees.
2. Lay a sheet of parchment paper on a baking pan and place strawberries on it.
3. Drizzle 2 tbsp maple syrup on the strawberries.
4. Bake in oven for 12 minutes, removing before the sauce starts burning 5. Mix coconut milk and white rum (if using)
6. Muddle strawberries to your liking and add to the mix.
7. Mix in maple syrup to your liking
8. Pour into popsicle mold and place in freezer for 5 hours or until it is fully frozen.
10. Run popsicle mold under warm water for a few seconds and it's ready to eat!
