Strawberry + Sage Agua Fresca (Paleo Friendly)

If you're reading this, congratulations! You made it through the longest work week in the history of work weeks. It's been one where every single day felt like Monday until I got to Thursday and it felt like it was Friday. BUT IT WASN'T. Well, Friday is finally here and just 8 hours of work stand between me and my precious weekend. Two days of (pretty much) perfect weather are on the forecast for Chicago, which makes the timing of this drink ideal.

I was inspired for this drink by my cocktail obsession at Cafe Con Leche, one of my favorite brunch spots in Logan Square. It's light and not too sweet, so it works wonderfully for summer & sunshine. This version uses fresh strawberry, cucumber and sage, is 100% paleo-friendly and has the option to add or exclude alcohol. So it's perfect for you and the kiddos too!

Strawberry + Sage Agua Fresca
Warm weather calls for this Strawberry + Sage Agua Fresca, made with fresh strawberry, cucumber and sage. Keep as is for kids to enjoy or add tequila for a fun adult drink!
Ingredients
  • 1 strawberry
  • 2 cucumber slices
  • 4 fresh sage leaves
  • 1.5 oz ginger beer (like Q ginger beer or your preference)
  • 1/2 cup ice
  • soda water
  • 1.5 oz 100% agave tequila *OPTIONAL
  • Garnishment:
  • 2 strawberry slices
  • 1 cucumber slice
Instructions
1. In a cocktail shaker, muddle together the sage, 2 cucumber slices, whole strawberry & tequila (if including.) Use a strainer to pour into your cocktail glass.2. Fill glass 1/2 way with ice. Place 2 strawberry slices & 1 cucumber slice on the ice. Add in your ginger beer and top with soda water. Stir and serve. Garnish with another slice of strawberry & cucumber if you like!
